Vegan Crockpot Chili (Serves 8-10) Ingredients

1 can black bean soup1 can pinto beans, drained1 can garbanzo beans, drained4 medium tomatoes, chopped (or a 14.5 ounce can chopped tomatoes, in puree)3 ears of corn, shucked, boiled in water for 12 minutes, cooled, and removed from ear (or 1 can corn, drained)1 onion, chopped1 green bell pepper, chopped4 cloves garlic, diced1 tablespoon chili powder1 tablespoon dried oregano1 tablespoon dried basil1 cup veggie broth (only if you are using fresh tomatoes)

What to do:

Toss all of the ingredients into a crockpot, mix well, and cook on high for at two hours.Serve with fixings of your choice. To keep it vegan try sliced avocados, vegan cheese, and vegan sour cream. Or you can go old-school and top with shredded cheddar & sour cream. Sliced green onions are a fabulous addition.
