We all know the best way to get veggie haters to eat greens is to slather the food in cheese, salt, and oil. But there comes a point at which dousing healthy stuff with bad stuff just completely defeats the original purpose. That’s why I love this eight-ingredient side dish: It makes veggies taste indulgent without all that calorie baggage. I’d wager that anyone can love spinach when it’s folded with tender roasted peppers and caramelized onions. Top it off with a sensible portion of bubbly melted cheese and you’ll have some veggie-loving converts on your hands.   1. Heat oil and red-pepper flakes in large ovenproof skillet over medium heat. Add onion and stir to evenly coat with oil. Spread in even layer over bottom of the skillet. Cook, without stirring, 5 minutes. Add garlic. Gently flip onion and cook, undisturbed, until brown and charred slightly (not burnt), about 5 minutes more.2. Arrange peppers in flat layer over 2 paper towels. Place another 2 paper towels on top and press out as much liquid as possible without crushing peppers.3. Add peppers to skillet, stir to combine, and let cook, undisturbed, over medium-high heat 5 minutes more.4. Prepare broiler for high heat.5. Transfer peppers and onion to large mixing bowl. Add one-quarter of the spinach to bowl and toss until spinach begins to wilt. Add spinach in batches and mix until all spinach has been incorporated and wilted. Add half of the Fontina and mix to evenly distribute.6. Return mixture to ovenproof skillet (or large baking dish) and spread into even layer. Sprinkle almonds and remaining cheese on top.7. Place under broiler and cook until cheese has melted and almonds turn brown and crispy, 3 to 5 minutes. Serve hot immediately.
