Salsa Zucchini – Serves 4 as side dish

1 large zucchini1 medium yellow bell pepper1 tablespoon chopped garlic½ cup salsa (for convenience, use store-bought salsa)1 tablespoon olive oilSalt and pepper to tasteChopped queso blanco (or feta or grated parmesan cheese)

What to do:

Cut large zucchini into half-inch thick discs.Cut peppers into thin slices.Chop garlic.Have salsa ready.Heat olive oil in a pan over medium heat.When oil is hot, add garlic, then sauté for 1 minute.Add zucchini discs and sauté on both sides for 3 minutes.Add yellow pepper slices and mix in with the zucchini.Add salt and pepper to taste.Add salsa and mix thoroughly to coat other ingredients.Cover pan; turn heat to low and let the dish simmer for 10 minutes.When ready, sprinkle generously with chopped queso blanco (feta or parmesan cheese).
