The San Diego-based Fresh! Healthy Vending company has been selling salads alongside fresh fruit, coconut water, protein bars, yogurt, and sandwiches since 2010. On the opposite coast, New York’s Champion Vending machines have been stocking their machines with salads for five years, and now have a number of salad varieties that customers can pair with Greek yogurt, fresh-cut fruit, hummus, and vegetable chips.  So how’s business for these healthier-vending offerings? Public response to Farmer’s Fridge has been so high that the company is planning to add nearly 20 kiosks to the two it started with by the end of the month.  While keeping machines stocked with fresh salads is difficult, technology can make it easier for consumers to get want they want, says Farmer’s Fridge founder Luke Saunders. Touchscreen technology brings detailed nutrition information to customers’ fingertips, credit card-accepting kiosks make paying painless, and customers will soon be able to see if a machine is sold out beforehand via an inventory tracker. Though Farmer’s Fridge has no plans to hit other states until they get steady footing in the Chicago metro area, this much is certain—greens-to-go are here to stay.
