, I thought I’d make them into a frittata or torta, as we call this omelet-type dish in the . There, torta is often made with eggs, ground meat and sometimes minced onion and potato. My version is sans meat of course, this being the day to cut out meat for our health and the health of our planet. So when you have leftovers like rice, couscous or beans, make them over into a satisfying frittata or torta! Recipe serves 2 to 4 Ingredients:

2 cups leftover steamed rice and peas (ok if you only have leftover rice)2 cloves minced garlic1 tbl olive oil½ cup red, yellow and/or green pepper, cut into approximately 1-inch long strips4 beaten eggsSalt & pepper to taste

What to do:

Heat olive oil in pan on medium heat.  Use a pan that can be put under the broiler.When olive oil is ready, sauté garlic until very lightly brown.Add leftover steamed rice and peas.  Season with salt to taste and stir well over low-to-medium heat. Make sure all the rice and peas get coated with the olive oil and garlic mixture.Add the pepper strips.Continue cooking for 3 minutes.  Meanwhile, turn on your broiler to low.Pour the beaten eggs entirely over the mixture.  Put pan under the broiler.  Continue cooking for another 3 minutes or until surface is golden brown.Garnish, serve and enjoy!
