If you love the combination of almond butter and chocolate as much as I do (i.e., a whole hell of a lot), then you just found your new favorite after-dinner snack. Despite the fact that they taste like truffles, these no-bake bites contain no added sugar, are diary- and gluten- free, and are made with whole-food ingredients like antioxidant-rich cacao and high-fiber almonds. They’re also a great way to use up any extra-ripe bananas you have hanging around. Store them in an airtight container in the freezer and you’ll always have a delicious indulgence on hand. 12–16 bites Make Bites 1 c almonds 1 banana 1 date, pitted and diced 1 Tbsp cacao powder ½ c + 1 Tbsp almond butter pinch of salt Cacao crunch ¼ c almonds ¼ c cacao nibs pinch of salt

- Meanwhile, make the cacao crunch. Place all of the ingredients into the same (cleaned) food processor or blender and pulse several times until only a few chunks remain.4. Remove bites from freezer and transfer crunch mixture to a plate. Roll each bite in crunch mixture until thoroughly coated. Repeat until all bites are coated, then return to freezer for one more hour. Let bites sit at room temperature for about 10 minutes before serving.
