Walnut-Goat Cheese Dip
SERVINGS: 4 ⅓ c walnut pieces 1½ Tbsp water 1 Tbsp vodka 1 Tbsp chopped scallion (white part only) ⅛ tsp black pepper 4 oz soft goat cheese, at room temperature Put walnuts, water, vodka, scallion, and pepper in food processor and pulse until nuts are finely chopped and a smooth paste forms, scraping down sides as needed. Add cheese and process until well blended. Serve with red bell pepper, broccoli, or other raw vegetables or with toasted pita.
