That’s the hope of Charlie Harry of Lick Me I’m Delicious, an irreverently flavored ice cream company based in the U.K. (whose flavor inventions include roast beef and cheddar cheese-flavored ice treats.) When rifling through research papers, he stumbled upon one touting the bioluminescent properties of jellyfish: A match in ice cream heaven, he thought. “I immediately started geeking up on the subject and eventually found a lab in China where they are synthesizing the protein,” Harry says. The scientists shipped him a protein sample—at no small price, since 2 grams of the stuff costs about $321—and jellyfish ice cream was born. Oh, and it glows: the warmth of your tongue raises the protein’s pH level, making your cone a fish-powered flashlight. So is jellyfish protein the next big health craze? Harry doesn’t know yet about the health properties of the dish. But at least it’s safe, right? “We’ll go with a ‘yes’ for now,” he says, since he hasn’t yet begun to glow in any odd parts. Glowing fish ice cream isn’t yet available in the U.S., but it’s a trend Harry is sure will hit soon. “You’ll definitely be seeing glowing foods in the next couple of years,” he says.
