meal, but there’s just something about beans that really amps up my satisfaction level. That’s why I was happy to discover from Kiki of , an official Meatless Monday blog. Kiki uses  - giant Greek beans, but also suggests using large lima beans if you don’t have  available. I also love that this recipe is perfect for either a potluck picnic dish or a simple springtime weeknight meal. Now if only tomato season would hurry up and arrive so I could enjoy the very meal in Kiki’s picture! Ingredients:

3 cups cooked giant Greek beans (gigandes) or large or Fordhook lima beans6 scallions, chopped small1/4 cup olive oiljuice of one lemon (about 3-4 tbsp depending on your taste!)1 tsp anise seed (whole, not ground)1 tsp fresh ground black pepper1 tsp salt1 tsp mustard powder1 tsp garlic powder
