Cranberry relish: In a food processor, pulse fresh cranberries, orange zest, orange juice, and unsweetened cranberry juice. Sweeten with maple syrup.   Harvest rice: Prepare brown rice with low sodium broth; add cranberries as it simmers. Toss with scallions and walnuts.   Tart baked apples: Core apples and place in baking dish. Fill cavities with a mix of chopped fresh cranberries, walnuts, brown sugar, and cinnamon. Pour orange juice over apples, coating dish. Bake at 375°F until tender (15 to 20 minutes).
