- GREASE 15” x 10” sheet pan with melted coconut oil or cooking spray.2. BRING 1 cup water to a boil in teakettle or small saucepan. Remove from heat, add sage and 1 Tbsp of the slippery elm powder, and steep, covered, 15 minutes. Pour tea through fine mesh strainer into glass measuring cup.3. COMBINE sugar, molasses, honey, and 1/2 cup of the tea in medium saucepan. Attach candy thermometer to side of pan. Heat mixture over medium heat, stirring constantly, until it reaches 300ºF, adjusting heat if necessary to prevent burning, about 15 minutes. The mixture will bubble, thicken slightly, and become glossy and caramel in color. 4. REMOVE thermometer and carefully pour mixture into prepared pan. Let stand 1 to 2 minutes and then, working quickly, score mixture lengthwise and crosswise with knife into small pieces (17 rows lengthwise and 10 rows crosswise to create ¾”x ¾” pieces). Continue to run knife along scoring marks until mixture hardens. Using an off-set spatula, carefully separate lozenges and transfer to wax paper.5. PUT remaining 1/4 cup slippery elm powder in small bowl. Working in batches, coat lozenges in powder and return to wax paper to cool and harden completely, about 1 hour. Transfer to airtight container (arrange in single layers separated by wax paper) and store in a cool, dry place.
